Mighty Car Mods: They take older (and in some cases junkier cars) and modify them. A few examples that stood out to me were A honda engine in an older mini, a rb26 swapped 240 fairlady z, and they recently modified 2 lancers and raced them together. They also did a 3 hour video in 2 parts where they went to Japan to buy a Nissan March super/turbo and explored the area.


SamCrac: This guy rebuilds more expensive cars that have been totalled out by insurance. It's interesting to watch him do things on the cheap and still get pretty good results:


Rich Rebuilds: He rebuilds salvage Teslas, it's pretty interesting to watch especially since Tesla doesn't sell a lot of their core components to consumers so it's cool to watch him take apart other teslas to get the parts he needs:


I can't post links yet but those are the three YouTubers I watch on a primary basis.
