I'm guessing this has to do with allowing the option to keep the music playing after parking the car and shutting it off, which in itself is sort of clunky. When you park, you have to press the Engine On/Off button twice quickly, and if you don't do it slow/fast enough correctly, the car will simply shut everything off and you have to hit the Engine On button and wait for the headunit to boot again and connect. But if done correctly, everything will turn off for about 2 seconds, and then the head unit screen will power back on and will resume playing from the last source (i.e. FM, BT, Pandora), while the car is in ACC mode. Pandora is notoriously unreliable when doing this though, as it generally produces an on-screen error when the screen comes back on. You'll notice that the connection to Bluetooth is almost instant when the screen powers on, so it seems as what your describing is happening here.

This is was different from my previous vehicle (2012 Nissan Altima) in which you simply held the Engine On/Off button for two seconds and the engine would shut off but the headunit would continue playing without any pause or interruption, and the car would go into ACC mode.

Why Mazda decided on this clunky procedure, I have no idea.

Or, if you put the gear in neutral or reverse (while brake is firmly depressed) and then press the off button, the music will continue to play. Then you can safely put the gear in park. Which, I think, is just as clunky. Haha.

I do this as well when I'm going to be out of the car for a short period. The problem is the car doesn't lock itself when only the ACC is on.

I put it in park as well but my 6 walk away lock feature doesn't work if I leave the ACC on. It start chiming indicating that the fob is not inside. If I try to lock it using the door's button it doesnt lock until it is completly shutted off.

Last night I came to the realization that I will not be buying my '15 6 at the end of the lease. The trigger was trying to use voice commands to make a simple phone call. It is such an ordeal. On my old car all I had to do was press a button and say "call Bob"... Nothing else.
Even if I wanted to jump through all the hoops on the 6's voice command system the blessed thing gets it wrong half the time.

That combined with the screwed up HU there is no way I will be able to put up with this for beyond lease end

Leaving the car on ACC is the equivalent of leaving your keys in an ignition. The car is doing what it is designed to do, the lock button on the fob was not made to turn the car off.

Why would you leave your car on and walk away from it?

Let me explain myself with this scenario. The HU takes 4 to 5 minutes to show my usb music. After that I have to search for the artist/song that I want to listen because the stupid thing can't remember ther last song I was listening. So, imaging making short stops, like going to the gas station, and repeating this procedure everytime I start the car waiting 4 long minutes. Working arounf the issue I do as others members are doing. Shutting the car off in neutral leave the HU powered up and then I put the car in Park. It would be nice if I could lock ther door, at least manually, during those short periods of time that I will be out the car. I know the car is working as it is suposed to do but is a pain to wait all that time to listen my favorite music.
