This is my current setup with rolled fenders:
Wheels: 18x7.5 5x114.3 ET48
Tires: 225/45/R18

I want to know if I would rub or encounter any problems if I were to change my wheels to a 43 offset using the tires I have now and having same dimensions for wheels (except for the offset). I have not lowered my car.

very true... I got my wheels shaved to a +48 offset. I won't run into a rubbing issue anymore

rubbing will depend upon three things:

1. rim width
2. rim offset
3. tire size

i'm running an 18x8 +45 with a 225/40/18. i did not rub at stock height...only after lowering. now, if you are carrying people in your back seat, you may rub at stock height but i normally did not, so...

the 18x7.5 in a half inch thinner than my wheels...so you should half 1/4 inch more clearance that way. however, you are pushing your wheels out by 2mm (because of the lower offset). all in all, you should still sit further inwards (by a few millimeters) in comparison to my setup in the rears. with a similar fitting tire and no elephants in your trunk, i think that you'll JUST clear. if you roll your fenders, you'll have ZERO issues at all.

+43 could go either way. There is no definative answer. I'm betting it rubs.
