Ok, I did some general searching and didnt really know what to look for in the search so Im just gonna ask. Im thinking bout getting some 18x8 rims with 40+ offset. Would those work ok? And what size tire would I need so it wouldnt rub or have any other issues? I do have a 1.5" drop on it. I know theres some of you out there that can help me out here.

Quick answer = Not without a fender roll, and maybe not even then. +42 is generally the min even with a roll

An 18x8 with 40offset will not fit. I am running an 18x7 with a 42offset. The widiest tire you will get on my setup is a 225. This is with the fenders rolled.

So if i went with these wheels but I had to roll my fenders would it be so bad? I mean is it a bad thing to roll your fenders? Is it pricey? Whats the pros and cons? Or would it just be better if I just try and get 18x7.5?
